Made several recipes now from this book. This book is absolutely phenomenal and although it takes a long time and a lot of patience the results are restaurant quality.

The recipes are also insightful historically - the author provides commentary on the origin & meaning of the recipe. Had amazing dinners which I now have to cook for the family to have at their house too when I cook or they get upset at missing out I've loved trying to cook curries during lockdown.
