As a vegetarian I'm always looking for new tasty recipes that are quick and easy to make as well as healthy. I started marking the ones I had cooked, making little notes on what was especially genius about the recipe and whether I had substituted any of the ingredients. I also like that it is split into recipes for when you’re in a hurry / when you have slightly more time / when you want to go slow.

Half the book is vegan (though could easily be adapted to include cheese etc) and half the book is vegetarian. I bought this book with Xmas vouchers and can’t wait to welcome 2023 and get going with fresh plans of nutritional cooking. We are vegetarian, so the latter half of the book is more suit to us but will probably try the vegan one too. Not enough photos: actually there’s one gorgeous glossy single page photo for each recipe, with double page shots mixed in.

It was just before the UK locked down and so being at home I had lots of time to try the recipes out. Have already done Leek and Puy Lentil Gratin with Crunchy Feta Topping twice. There are three sections, quick, medium and recipes that take a little longer.
