On the plus side, it actually does thicken up sauces, and without altering the flavour (at least with strong dishes; haven't tried it with 'plainer' sauces). I bought this as a grain-free thickener for stews and curries. This is at least 5-7x more expensive than corn starch, and you'll need to use more.
I'd never heard of Kuzu before, so this was somewhat experimental. It comes in 'crystals' rather than a powder (see the attached pic), but these easily dissolve in water just the same. It requires a little more than the equivalent amount of corn starch, but it works.
Corn starch is fine for gluten-free, but it's not GRAIN free -- so it's not ideal if you're doing Paleo. The only downside is the price. But still -- a pretty hefty price for something as routine as thickening up a stew! It turned out to be a pretty good choice.
If getting this for the grain-free element, you're probably used to paying the 'Paleo tax' anyway, and this will last for a good few meals.
